Marble is highly porous, allowing spills to permeate the surface and sink deeply into the stone. Once you've put any natural stone material, make sure to seal it. While sealing does not prevent staining, it can decrease the absorption process, allowing you more time to wipe up before a stain develops.
Use milder detergents that won't scratch your marble. Dishwashing soaps and pH neutral soaps diluted in warm water, or a professional marble cleaner, are both suitable. Acidic cleansers like vinegar, ammonia, and citrus cleaning should be avoided. Use a gentle mop to clean the area.
